
In an effort to clean out items in our pantry/freezer I decided to make orange cranberry bread. With all of our cookbooks packed I scoured the internet for a recipe to try and found one from Sally’s Baking Addiction and having all of the ingredients on hand I decided to give it a go.
Normally I would do a rough chop on the cranberries but this recipe used whole ones so I decided to follow the recipe. This recipe was pretty easy to throw together though I did manage to forget the streusel topping because I was face-timing a friend while throwing it together.
It baked for a little over an hour because when I did the tooth-pick test it was still a little unbaked in the middle but after adding another 10 minutes it came out perfectly. I decided to go ahead and do the icing because… well do I need a reason to add an icing glaze?
Visually it turned out really well and was perfectly baked with a nice crust. I felt like the taste was good; though I would definitely chop the cranberries next time. I wish I hadn’t forgotten the streusel because I think that would have been very good. I actually wasn’t a fan of the icing but it might have been really good with the streusel. So my advice would be either make it with the streusel and icing or leave both off – but that’s my thought. Overall though it was a great recipe and made for a delicious breakfast!
