Oatmeal Cream Pies

I’ve always been a big fan of Oatmeal Cream Pies and will occasionally pick up a box from the grocery store. I saw this recipe though and thought it might be fun to try and make them myself.

This recipe is very easy to throw together. You’re basically making a big oatmeal cookie so you cream the butter, sugar, and eggs first. Then you mix together the dry ingredients. Give those a nice stir before putting the two together. Throw in the oatmeal and give it a good stir and then scoop those cookies onto a lined baking sheet. I baked mine for about 13 minutes but they looked like they still needed a little time. I kept them in there for another 2 minutes or so but was more watching for the edges to crisp a little and the middle to look done than watching the timer.

The filling is basically a buttercream so you just mix together the butter, powdered sugar, milk, and vanilla. This is where using room temp butter is important otherwise you’ll end up with giants chunks of butter throughout the filling. I’ve made sandwich cookies in the past and too often the filling is not sturdy enough and when you bite into the sandwich cookie it all oozes out. I made my filling a little thicker to try and avoid this issue.

Once the cookies are cool, you can spread or pipe the filling onto the cookies. I wanted to mimic the actual Little Debbie Oatmeal Cream Pies so I piped it on. These were good, but I was a little disappointed because I felt like they didn’t taste like the original. I think the cookies were pretty close, but the filling was a little too sweet and not as light. I’d make these again, but might play around with the filling to see if I could get it a little closer.
