Banana Oatmeal Pancakes

I’m always trying to find ways to use what feels like the never-ending stash of frozen bananas in our freezer (seriously, why do bananas go bad so fast??). These pancakes looked simple and healthy, so I figured they were worth a try.

You could whip these up pretty quickly which is nice. Mash up the bananas, mix them with the rest of the ingredients and cook them up like you would any pancake. I used a cast-iron skillet and added a little butter before each batch to keep them from sticking. The batter spreads out pretty thin, and you just wait for bubbles to pop up before flipping.

Despite being banana-based, they don’t actually have a strong banana flavor. They’re kind of mild and neutral, which makes them great for topping with nut butter, yogurt, fruit, or whatever else you like. Just don’t expect them to taste like traditional pancakes, they’re definitely more of a healthy twist.

That said, I did burn mine a little (as you can see in the photo), but they still turned out okay. All in all, a nice option for when you want to clear out the banana stash and make something quick, healthy-ish, and easy.
