Classic Birthday Cake

I love a good yellow cake with chocolate frosting and decided to try out this recipe for a family gathering. You may notice I often use recipes from some of the same people and while I try to branch out a little it’s also nice to have some go-to people who I know are reputable and the end result will be good. King Arthur is definitely one of those!

Start by mixing your dry ingredients and then mix together the eggs, sugar, vanilla, and almond extract beating until the mixture gets pale and thick and falls in ribbons when you lift the beaters. Gently mix in the dry ingredients just until it all comes together being careful not to overmix.

Next you’ll heat up the milk in a saucepan. I was really intrigued by this step since it’s not something I’ve done before. Once it’s warm then you’ll stir in butter and oil until melted. Slowly pour that warm mixture into your batter, mixing on low just until it’s smooth.

Pour the batter into prepared pans and then bake. I’ve gotten into the habit of putting a parchment round in the bottom just to ensure the cakes come out cleanly.

While the cakes are cooling you can focus on the frosting. This was a little different too but you just mix the cocoa powder with a bit of powdered sugar, salt, vanilla, and water until it forms a thick paste. Then beat in the butter and the rest of the powdered sugar until fluffy and spreadable adding a little water if it feels too stiff. I didn’t do a crumb coating this time but it worked out well anyway.

This cake was delicious. It had a great crumb and the frosting was rich but not overpowering. This will be my new go-to recipe for a yellow cake with chocolate frosting recipe. Definitely one you’ll want to try!
