Soft Lemon Sugar Cookies

I’ve always liked lemon treats, but I feel like I like it even more the older I get. While lemon bars are one of my favorite lemon baked goods, I’ve really been wanting to make these lemon cookies for a while now and finally got around to it.

I think I’ve said this before, but I’m actually not a huge cookie person. I know I make a lot, but that’s usually because they’re pretty simple and easy to take for a crowd. This recipe is no exception and the dough comes together really quickly. You just cream the butter and sugars, mix in the egg, vanilla, lemon zest, and juice, and then add the dry ingredients. Once you’ve got everything fixed, you roll the dough into little balls, coat them in sugar, and bake.

I followed the recommendation to start with three tablespoons of lemon juice, but next time I think I’ll add a bit more to really make the lemon flavor pop. While they’re definitely lemon-forward it was still fairly subtle to me and I’d love to add a little extra zing. I imagine they’d also be pretty amazing with a light lemon glaze if you wanted to dress them up a bit.

Overall, this is one of those recipes you can easily whip up on a weekday evening and still impress people with. They look simple, but they’ve got a really nice depth of flavor.
