Salted Butterscotch Cookies

I love a good cookie recipe, mostly because they’re just always so easy and low-effort. This one was no different—just a simple dough, one bowl, and you’re off. I hadn’t made anything with butterscotch in a while and forgot how much I actually like it. It’s not something I crave all the time, but when I do have it, it’s such a nice little change from the usual chocolate chip situation.

These cookies come together really quickly: just beat your butter and sugars, mix in the egg and vanilla, then add the dry ingredients and stir in those butterscotch chips. I used a 2-tablespoon scoop and spaced them out on parchment-lined baking sheets. A little sprinkle of flaky salt on top is totally worth it—it balances the sweetness and makes them look a little more polished.

They bake in under 11 minutes, and I made sure to pull mine out when the edges were just golden and the centers still soft. They definitely firm up as they cool, so don’t worry if they feel too soft right out of the oven. You can press a few extra chips on top while they’re hot if you want to make them look extra cute. All in all, super simple and very good!
