I’m not sure where I ran across this recipe but it looked fun. If you’ve got some leftover eggnog at your house post-Christmas then you can use it up here!
The crust is a pate a choux pastry and is pretty easy to make. You don’t want to cook it too long on the stovetop, but mine came together pretty quickly and then I spread it into the pan and popped it in the oven. It smelled a little like a french bakery while baking so that was nice. When it’s done you’ll let it cool but you can go ahead and mix together the eggnog filling and pop it into the fridge if the crust is still warm once you’re done.
The filling was easy; just the pudding mixes, eggnog, and cream cheese. You’ll want to make sure your cream cheese is room temperature so you can mix it a little easier so be sure to set that out earlier. When you’re ready to put everything together you’ll just spread the filling onto the crust, then top with whipped topping. You do want to let this sit in the fridge for at least 2 hours (or overnight) before eating though.
I wasn’t sure whether I’d like this or not, but it was really good! It was rich, but I didn’t think it was super sweet and I liked all of the flavors together. While it has been a while since I’ve had a cream puff, this did remind me of one. I’m marking this as a 9 for time spent only because you do need to factor in fridge time, but this is super simple and would be a fun holiday dessert and I’d absolutely make it again!
