
I LOVE oatmeal raisin cookies; however, my husband does not. Normally I’ll just make an oatmeal chocolate chip cookie for him, but every once in a while I’ll make oatmeal raisin cookies for me. I’ve tried a few different kinds of oatmeal cookies before, but apparently never tried an oatmeal raisin cookie on this blog so today’s the day!
This recipe is a little more time consuming than a traditional cookie recipe, but it’s worth it. First, you’ll want to brown the butter and you’ll want to do this beforehand so it can solidify again before you start the recipe.
After the butter has hardened, you’ll cream it with the sugars. Then you’ll add the eggs one at a time and the vanilla. Mix your dry ingredients together and add it to the butter/sugar/eggs mixture until no flour is showing. Then you’ll fold in the oats and the raisins and bake!
I didn’t add any flaky salt to these, but I think I’ll try it on some next time just to see how it tastes. These were amazing though and some of the best oatmeal raisin cookies I’ve ever eaten. The browned butter added a nice nutty flavor which paired well with the oatmeal, raisins, and spices. Perfect mixture of spices as well. These will 100% be in my normal rotation and were well worth the little extra time to brown the butter.
