
I love banana pudding and I love cheesecake; but I wasn’t sure what to expect with this Banana Pudding Cheesecake.
The recipe itself isn’t necessarily difficult, but it is quite time consuming. You’ll start by making your own vanilla wafer crust. Crush some vanilla wafers and mix in butter and sugar – then bake. As you can see from the picture my vanilla wafers had some bigger chunks, but it came together well and didn’t seem to be an issue.
Once the crust was done and after the pan is a little cool you’ll want to go ahead and wrap the outside of the springform pan in foil. Go ahead and put it in a roasting pan since you’ll be creating a water bath.
Then it’s time to focus on the filling. You do want to make sure your cream cheese and eggs are room temperature. You basically just mix everything together (there is a specific order that can be seen in the instructions) but be sure to mix on a slow speed because apparently higher speeds can contribute to cracking. After everything is mixed you’ll pour that onto the crust. Boil some water and then gently pour that into the roasting pan making sure you aren’t going above the foil line. Then you’ll let it bake for at least 90 minutes. I pulled mine out right around 95 minutes and then you’ll slowly let it cool. First, by just turning off the oven and leaving the cheesecake in the oven for 30 minutes. Then you’ll crack the oven door open and let it sit another 30 minutes. Finally you’ll cover the cheesecake and pop it in the fridge either 5-6 hours or overnight.
I made the topping just a little before serving. The whipped topping is easy to make and once it’s done you’ll just spread across the top and add sliced bananas and vanilla wafers!
Banana flavored stuff can always be a little weird so I was prepared for some of that, but it really did taste like banana pudding. It was fun to have something a little different, but if you’re in the mood for banana pudding then it would be a nice easier and less time consuming to just make it. But a fun bake for sure!
