
Last year I made this Cheerwine Chocolate Cake so this year I decided to try something a little different and try these Cheerwine Cherry Cupcakes.
Honestly this recipe is incredibly simple because you use a cake mix. While I love baking things from scratch, I’m not ashamed to say that I love a boxed cake mix. Most of the time it yields a much more tender cake and it’s just super easy.
This recipe is great because while it has the ease of a cake mix, you add stuff to it so there’s a little extra flavor. Basically you just mix all of the ingredients together and then bake. I let mine go just a little too long so you can see a little browning around the edges. Thankfully they weren’t too bad though!
The frosting was easy as well, but I didn’t make the two different colors since I was making this for something and was a little pressed for time. I just made all of mine pink and I think I threw in just a little of the cherry gelatin into the frosting while mixing as well since I had extra and figured it would help the taste.
I waited until right before serving to add the cherries since they can still drop some of the cherry juice and I didn’t want it to sit overnight like that and then I didn’t get a picture of it with the cherries. I loved the cherry flavor of these cupcakes and considering how easy they are they’re a good go-to when you need something fun and delicious in a pinch.
