I think I’ve said this before, but I’m not a huge fan of chocolate chips in my banana bread. It’s not that it isn’t good, but I am more of a classic banana bread gal so I’d rather have walnuts. However, someone shared this recipe with me and said it was super good so I thought I’d give it a try.
I make banana bread a lot, part of that is because I buy bananas thinking I’ll eat them before they start getting a bunch of spots (that rarely happens) so I have a ton of frozen bananas in the freezer. It also could be because it’s usually really easy to throw together. In the case of this recipe, you mix the melted butter and sugar, then add the rest of the wet ingredients and mashed bananas. Once that’s mixed together fold in the dry ingredients and add the chocolate chips.
I set the timer for 1 hour and 15 minutes and once it went off I checked on it. Still looked jiggly in the middle so I let it go another 10 minutes. It looked a little better than but was still wet on the inside so I let it go another 5 minutes. It looked done on top so I pulled it out and let it cool for a while. When I finally when to get it out I cut into it and realized it still needed to cook more in the middle. I was able to eat the ends, but had to throw the majority of this out because it wasn’t done. This really did taste good and I hate having to throw stuff out so I was really disappointment this didn’t bake all the way. Also, I have NO IDEA why this didn’t bake all of the way as I thought I did everything to a T. I will try this again though because my friend has baked this with no issues, so I know it’s possible. If you like chocolate chips in your banana bread I think you’ll really like this and other than it not baking all the way, this turned out really good.
