Red Velvet Cinnamon Rolls

Happy Leap Day! Finishing off this month of Red Velvet bakes with these cinnamon rolls that look so pretty! There are quite a few recipes for Red Velvet Cinnamon Rolls online, but I chose this one because I wanted to make the dough the night before and let it do the second proof overnight. Honestly, while it does take a bit longer, doing it overnight makes it easier. Plus, you don’t have to get up super early if you want to have these for breakfast.

While there is an order to which ingredients you put in first it’s pretty easy, especially if you use a standing mixer. Then you’ll drop in the softened butter while it’s mixing. This took a little longer than I thought and there were still a few places with larger softened chunks when i pulled it out but I kept going. Roll this into a ball, place it in a greased bowl and then let it rise for 1-1 1/2 hours.

Once it’s risen, you’ll roll it out as directed and then spread the pre-mixed filling on the dough. I did feel like this didn’t make a ton of filling. The photo I took without frosting makes it look like there’s more filling, but I felt like when you ate it it felt a little too bready. Might be work doing a little more filling to see if that helps? Then you’ll roll the dough and cut into circles. I put mine in a pre-greased pan and then popped it in the fridge where it saw for about 9 hours.

The next morning I pulled it out and was going to preheat the oven and let it warm up a little (before turning it off) since the kitchen was cold and I knew it would rise better if it was a little warmer. Unfortunately I waited about 15 minutes and the oven never heated. That’s when I realized our oven had broken (again). So I texted my sister and drove 40 minutes to her house to bake these, then drove home with 15 minutes to spare before we had people arriving for a little Galentine’s Brunch I was hosting. It does seem crazy to drive that distance just for cinnamon rolls, but I really wanted to try these and they were perfect for our brunch!

The frosting was delicious and while the cinnamon rolls themselves were a little bready to me, they were delicious. I wouldn’t make them all the time, but they were fun and delicious and I’d definitely try them again!
