
Chances are you only think of cake when someone says “red velvet.” I decided this month to try a lot of different red velvet recipes that aren’t cake and started off with these Red Velvet Cookies!
This is a very standard cookie recipe, meaning you start off by creaming the butter and sugars. You’ll then add the eggs and then the remaining wet ingredients, including the red food coloring. Whisk together the dry ingredients and then mix until combined; then fold in the white chocolate chips. I never remember to set some aside to put on the top right after they come out of the oven but I did this time!
I baked these right at 11 minutes and as the directions state, they do deflate as they cool. I added a few of the remaining white chocolate chips as they cooled to make them prettier.
I’ve said this before, but I’m not a huge cookie fan, but these were good. Not my favorite, but they were different and while I didn’t feel like they screamed red velvet to me, they were good and reminded me of it. I think the white chocolate chips are what threw it off a little for me. They looked great though and were fun and unique though!
