1 Giant Double Chocolate Cookie

Happy Valentine’s Day! I ran across this recipe last year and knew it had to go into the rotation because every once in a while you just want one cookie. I haven’t really found a recipe that really only makes one though to be fair, I haven’t really been looking. Regardless, this recipe looked festive and I love that isn’t just one (giant) cookie!

This recipe is super easy, which is great since I feel the point of a recipe like this is to make it quick and simple. You do everything like you would for a large batch cookie recipe: cream the butter, sugar, eggs and then whisk in the dry ingredients. I used my hand mixer since this was such a small amount. The only thing I had a real issue with is trying to get the right amount of eggs since they can be hard to divide. I ended up with a little bit of a dry batter so I added just a little extra egg to make it a little more cookie dough like.

Once I had everything mixed I dropped the shaped dough onto a baking sheet and popped it in the oven. Mine wasn’t as round as it could have been and you can see from the picture how it wasn’t quite uniform. Mine baked for about 22 minutes and you can see from the picture how it was starting to crisp up a little around the edges. Knowing this, I might pull it out around 20 minutes next time to see if that helps; though it wasn’t burnt and tasted fine. I pressed a few more chocolate chips into the cookie once I pulled it out of the oven and it really made it look much prettier.

Taste-wise, this was pretty good. I might add just a little more chocolate chips next time as I like a good bit of those in my cookie, but it had a nice chocolate taste. You could swap out the Valentine’s sprinkles for any other kind and make this whenever you want. It’s super easy, quick, and looks and tastes great so perfect when you’re craving just one cookie!
