
It’s been a long time since I made cheesecake brownies and when I saw these Red Velvet ones I thought they’d be perfect for this month.
This recipe is a little different than most brownie recipes I’ve done in that you mix the melted butter, sugar, cocoa powder, vanilla, food coloring and salt together first. Then you whisk the eggs and add them to this batter and then fold in the flour.
Pour most of the batter into a greased pan and then you’ll mix together the cheesecake filling. It’s very easy, but be sure to mix together well so you don’t end up with chunks of cream cheese. You’ll then drop dallops of this onto the brownie batter and spread it out to create a layer over it, then add the remaining brownie batter and then use a knife or something similar to swirl it around.
These turned out really well and I loved the taste! I’d absolutely make these again.
