Funfetti Biscotti

These biscotti were fun to make! Biscotti is similar to scones in that it’s pretty easy to make and usually turns out great. This recipe was no exception!

Seriously, you mix together the wet ingredients then the dry ingredients and mix together. If you’ve ever made scones then you do the same thing in that you dump the batter out onto a sheet tray with parchment paper and then pat it together. For this you kind of want it to be a sort of rectangle and you want it maybe an inch thick. You’ll let that bake for 20 minutes, then let it cool for 10 and then you cut and bake each side for about 6 minutes to help finish baking it and to dry it out just a little.

After this cools completely then you can melt the white chocolate (I used a little coconut oil to thin it out a little) and then dip the biscotti in it and add more sprinkles! Super fun looking, easy, and these tasted great!
