
Iced cookies are fun, but sometimes it’s just easier to make bars and ice the whole batch!
These are really easy to make. It’s kind of like making cookies, but I don’t normally put powdered sugar or corn starch in my cookies so that’s a little different. As the recipe said, this was a little dry at first when you cream the butter and powdered sugar, but it did cream up. This recipe calls for plant based butter, but I didn’t have any of that on hand this time so I just used regular butter. You incorporate the rest of the ingredients in and gently stir in the sprinkles and then pop them in the oven.
The frosting was also super simple and I used regular butter, regular milk, and vanilla bean paste since I did have some in the pantry. You’ll spread these onto the cooled bars and then add more sprinkles.
These tasted really good and could easily be adapted to fit various holidays if you use different sprinkles. Very easy and fun so they’ll certainly go into my regular rotation!
