Cinnamon Streusal Pumpkin Coffee Cake

I’m a classic coffee cake gal and while I enjoy pumpkin, it’s not my favorite thing in the world so I really didn’t think I would like this recipe.

Very standard coffee cake recipe where you make the streusel first, then you focus on the wet and dry ingredients for the actual cake. Once you have those ingredients mixed separately, then you mix them together and then top with the streusel.

My coffee cake was done right around 35 minutes and I waited a bit before making the glaze since I wasn’t going to eat this until the next day. This looked really pretty and tasted delicious. It had a lot of great spice flavors and the pumpkin was there but it wasn’t overwhelming, which I appreciated. While a classic coffee cake is still my go-to, this is definitely something I’d bake again!
