
I’m not a pumpkin spice latte person, but I do enjoy the occasional pumpkin baked good. I’m kicking off a month of pumpkin bakes with these vegan chocolate chip pumpkin cookies!
These are very very easy! Honestly I feel like with easy recipes like this I sound like a broken record so I’m not even going to waste time going over the instructions. You’ve got a few options for the “milk” and I ended up going with unsweetened coconut milk since that’s what I had on hand. I was also excited to find that Nestle now makes a chocolate chip that’s vegan and allergen free so that’s what I used.
I baked these for about 11 minutes and they still seemed very gooey in the middle but I decided to chance it and follow the instructions rather than try and bake them some more. I’m thankful I did because the middle firmed up while it cooled and was really nice and chewy. I kind of eyes the chocolate chips and think I went a little overboard (if it’s even possible!) but it was worth it. These cookies tasted great and has a nice pumpkin flavor without being over the top. I’d absolutely make these again, especially since they’re so easy!
