
We went to an apple orchard last weekend and that put me in the mood to make something with apples. I went through all of my saved recipes and found this apple cake and thought I’d give it a try.
As the recipe name implies, this is super easy. You’re basically mixing all the dry ingredients, all the wet ingredients, and then mixing those together with the chopped apples. Honestly peeling and chopping the apples took the most time.
For the apples, I used three and decided to go with three different kinds: Mutsu, Granny Smith, and Honeycrisp. There was really no rhyme or reason to why I chose those, but I know those are all great baking apples so you really can’t go wrong with any of those.
I dusted this with powdered sugar but by the time I served it (about an hour later) it had seeped into the cake so it wasn’t as pretty. I think next time I’ll try the glaze. It was very good though; lots of good apple flavor and not super sweet. Very fall-like and that’s what I was going for here!
