Maple Shortbread Sandwich Cookies

Maple is a flavor I really don’t bake with often; though I have made a pretty delicious maple bacon bourbon cupcake before! These maple shortbread sandwich cookies looked like fun so I thought I’d give them a try.

I have only made shortbread a few times before and have found it to be a little tricky. It’s a thick dough for a cookie and in the past I’ve had a few issues getting them in the correct shape (case and point these delicious key lime shortbread cookies I made a few months ago). It’s a super easy dough so that was a cinch to mix together. I wrapped mine and let it sit in the fridge for about an hour and then let it sit out for at least 15 minutes per the directions.

I used the saran wrap to help keep the dough from sticking to the rolling pin and given some of the comments regarding cookie stamps, I opted to just use a cookie cutter for mine. I realized I only have either big cookie cutters or tiny ones so mine are a little smaller than the 2″ cookies this recipe mentions. I cut all of my dough out and then put it in the oven for 18 minutes initially and then after making sure they weren’t burning I let it go for another 5 minutes and they were perfect! The whole house smelled like maple by this point so that was a nice bonus.

The filling was also super easy to make and I love that this is a thicker filling. Some of the sandwich cookies I’ve made this past month have been fluffier or thinner so it’s hard to really get a good bite of everything if it’s oozing out. Because it was so thick I had to use a knife to spread it so it’s a little messy, but they turned out pretty good.

I had a few of my shortbread cookies that were a little sad looking, but I tried to put most of those on the bottom. As I said, they are a little smaller than they’re supposed to be, but I was pleased with how they turned out. Also, they’re DELICIOUS. The filling is pretty sweet (though I wouldn’t say it’s too sweet) but it pairs nicely with the shortbread. I would absolutely make these again, especially during the fall!
