
I’ve never made whoopie pies before, but someone gave me a pan to make them and I figured if it’s going to sit around the house I’d better use it. I love both coffee and oreo’s, so I thought this recipe would be a great one to try for my first time making these.
This recipe is insanely easy. Plus it doesn’t take a lot of time so if you’ve got the ingredients on hand then you could whip it up in no time. I’ve used recipes from Cambrea Bakes before and I LOVE when people put the ingredient amounts in the steps section. I don’t know why everyone doesn’t do that because it makes it very easy to read and you’re not scrolling up and down. This is really like a cupcake or cake recipe so I’m not even going to comment on the steps because it’s that’s easy.
If you don’t have a whoopie pie pan (I imagine most people do not) you can use a cookie sheet with parchment paper. I picked up the wrong cookie scoop so mine ended up being huge. Since they were so much larger they did take a little longer to cook (about 7 minutes more). The buttercream was easy to make and tasted delicious by itself. Once the whoopie pies had cooled I began assembling.
These were very good and very rich. The cakes were a little more dense than a cupcake and even though mine were much bigger than they were supposed to be they were very good as altogether. I’ll definitely try these again because they tasted great and were so easy!
