
We’re in the middle of blueberry season so I thought I’d take a few weeks to make some blueberry inspired bakes. I really love bran muffins and was going to make my normal go-to recipe, but then I saw this recipe on the side of the box for blueberry bran muffins and figured I’d give it a try. This particular recipe isn’t a huge deviation from the regular one so it’s very simple. I love this because it’s easy to throw together and you can easily make and bake this within about 30 minutes.
While the steps have you doing the dry ingredients first, I’d recommend measuring out your cereal and pouring the milk/egg/oil so it can soften. Mix together the dry ingredients and then wait until the cereal is softened. I cheated a little and think I went ahead and mixed everything together after about 5 minutes. I mixed the batter together well and then gently folded in the blueberries (I used frozen).
I used a large scoop to portion these into muffin cups and popped them in the oven. After 20 minutes these were done and I let them cool briefly before adding a little butter and eating. They were delicious and were a nice change from my norm. While nothing beats the classic bran recipe in my opinion, this will definitely go into my rotation.
