Victoria Sponge Cake (Mini)

I actually wanted to make this a few weeks ago to celebrate the coronation, but I didn’t get a chance to make it then so I got a second change now! I’ve always wanted to make a Victoria Sponge Cake (also known as Victoria sandwich) and I found this recipe in the Downton Abbey Afternoon Tea Cookbook my Aunt gave me!

This is a super easy recipe. You cream the butter and sugar, add the eggs and vanilla; then gently stir in the dry ingredients. I used lotus cup parchment liners and a large muffin tin and it seemed to work nicely.

I put the whipped cream and jam on right before eating to ensure the cakes didn’t get soggy. I also ate mine with a nice cup of English breakfast tea (not pictured) and it was delicious. The cakes were a little dense but maybe they’re supposed to be that way? Regardless, they were very good and I will absolutely be making this again!
